2025 Rosé of Pinot Noir
The fruit for this Pinot Noir Rosé was picked from our estate vineyard. The clones used in this Rosé are 38% Dijon clone 667, 36% clone 114 and 26% 115. The three clones, picked on different days, were carefully hand sorted before being destemmed and cold soaked for about five hours before we gently separated the juice from the seeds and skins. After an overnight settling of the juice yeast was introduced and a 55-day fermentation ensued. The aromas are that of strawberry and watermelon, with a pleasant floral note. The flavors are similar with a crisp mid palate with a balanced, clean finish.
