2021 La Colina Pinot Noir
A well-known vineyard in the hills of Dundee called La Colina, “The Hill”. Harvested during the last week of September, the grapes were destemmed and cold soaked for 48 hours before being inoculated. After what seemed like the perfect fermentation the wine was pressed, settled, then put to bed in 50% new French oak barrels for 20 months. The resulting wine has kitchen spice aromas like white pepper along with notes of black cherries and rich raspberry flavors. The pallet is soft and silky with a lasting finish.
